White Chocolate Peeps

Confession time.  I am not a fan of marshmallows.  In fact just thinking about the texture makes me squeamish.  Mini ones are okay, but the big jumbo ones make me gag. (Sorry to be so graphic.)  I will make one exception and that is only to a marshmallow cooked perfectly brown over a camp fire.  It has to have just the right amount of crisp on the outside and gooey on the inside.  But…my boys LOVE them.  And my boys love Peeps.  One thing I have found to be true in my life is that everything is better when it is covered in chocolate and more specifically white chocolate.  So, I figured, why not try White Chocolate Peeps.

This week it was my son’s turn to bring Friday snacks to Kindergarten.  The last time I brought snacks for a kindergarten class was two years ago when we brought these Juice Box Robots (which just happen to be my very first post I ever published. :) )   I asked his teacher in advance if they had a theme for the week and she told me they would be learning all about Rainbows.   I love that Rice Krispie treats are so easy to make so I put a little spin on them and made Fruity Rainbow Crispy Treats using Fruity Pebbles as well as a yummy rainbow fruit snack.
